Not Healthy Banana Crumb Muffins (Vegan)

Why is this called Not Healthy Banana Crumb Muffins? Well, because they are LOADED with sugary goodness. Mmm…

I have no idea how unhealthy they are, feel free to punch in the numbers and let us know. 🙂

Ingredients

For the batter:

  • 1 1/2 Cups of all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas, mashed up
  • 3/4 cups of sugar (I used raw cane sugar)
  • 1 egg replacer of your choice (I used Ener-G)
  • 1/3 cup of vegan butter,melted (I used homemade vegan butter)

The crumb topping:

  • 1/3 cup brown sugar
  • 2 tablespoons all purpose flour
  • 1/4 teaspoon cinnamon
  • 1 tablespoon of vegan butter

Step 1:Pre-heat oven to 375. Mix together the mashed bananas, the 3/4 cup sugar, melted butter and egg replacer.

Step 2: In a separate bowl mix the flour, baking soda, baking powder and salt together.

Step 3: Add the dry ingredients to the wet banana mixture. Stir well.

DSC_0355Step 4: Add to muffin batter to a well oiled muffin tin/baking cups or in my case the silicone muffin tray.

DSC_0356Step 5: In a small bowl mix together the crumb toppings ingredients until it resembles clumpy sand.

DSC_0358Step 6: Add the crumb topping to the unbaked muffin batter and bake in the oven for 18-20 min.

Step 7: Let cool and enjoy your cavity. 😉
